  • 3.5 oz ricotta
  • 4.2 oz stracchino
  • 7.1 oz smoked salmon
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 pinch salt
  • 2 pinches pepper

Preparation of salmon and stracchino crepes roll

  • To prepare the salmon and stracchino crepes roll, you can prepare the crepes the day before and keep them in the fridge to save time.

  • Mix the ricotta with the stracchino and herbs, also adding salt and pepper to make everything creamy.

    Cut the smoked salmon into not too large pieces and add it to the cheese, then mix.

  • Now you are ready to shape the salmon and stracchino crepes roll, so take the crepes from the fridge and place one at a time on a cutting board, generously spread with the ricotta and salmon cream, leaving the edges free.

  • Roll up the crepe on itself and place them one by one on a tray.

  • When all the crepes are ready, place them in the fridge to firm and flavor for at least 1 hour.

    Then you can cut them into chunks as I did, or into thinner slices securing them in this case with a toothpick.
