Delicious sandwich loaf is not only tasty, it’s also easy, quick, and no-bake of course. You can vary the filling based on what you have at home; today we used some previously cooked chicken that we minced and mixed with some cream cheese enriched with herbs. The other two fillings are very simple as you will see from the ingredients and description.
The sandwich loaf is perfect for a buffet dinner or for appetizers during holidays like Easter or Christmas, but also for a stand-up dinner with friends as you can slice it and everyone can take a slice and go.

Ingredients for the Delicious Sandwich Loaf

  • 1 sandwich bread (1 package long without crust)
  • 10 sun-dried tomatoes in oil
  • 12 g black olives (pitted)
  • 2 hard-boiled eggs
  • 1 bunch parsley (fresh)
  • 150 g cream cheese
  • 120 g chicken breast (pre-cooked grilled or boiled)
  • 4 leaves lettuce

Preparation of the Sandwich Loaf

  • 1- Preparing the base: Start by boiling the eggs in water for 8 minutes. Once cool, peel and finely chop them with a knife.

  • 2- Chicken mousse: In a mixer, blend the pre-cooked chicken with 60 grams (2 oz) of cream cheese, a tablespoon of oil, and a handful of fresh parsley until you get a thick and smooth cream.

  • 3- Flavorful mix: Coarsely chop the black olives and sun-dried tomatoes well-drained from their oil.

  • 4- Assembling the loaf:

    . Place the first slice of bread on a tray and evenly spread all the chicken mousse.

    . Position the second slice of bread. In a small bowl, mix the hard-boiled eggs with 3 tablespoons of mayonnaise and distribute the mixture.

    . Cover with the third slice of bread. Mix the chopped olives and sun-dried tomatoes with more mayonnaise and spread it well. Add the washed and dried lettuce leaves on top.

    . Take the last slice of bread, spread a thin layer of mayonnaise on one side, and place it on top of the lettuce (spread side down).

  • 5- Decoration and Resting: Mix the remaining cream cheese with a little chopped parsley and use it to “frost” the outside of the loaf.

    Decorate the top with chopped olives, sliced hard-boiled eggs, and sun-dried tomatoes.

  • 6- Gently wrap with cling film (without compressing too much) and let it rest in the refrigerator for at least 1 hour before serving.

Storage and Variations for the Sandwich Loaf

The sandwich cake can be stored in the refrigerator well-covered with cling film or in an airtight container for 2 days.

If you want to give an even more festive touch to your sandwich loaf, here are some ideas to vary the fillings while keeping the same scenic base:
“Maritime” Variant (Salmon and Avocado): For a more refined Easter lunch, replace the chicken mousse with smoked salmon and cream cheese. You can create a layer with avocado slices and lime juice for an irresistible touch of freshness.

“Delicious” Variant (Tuna and Artichokes): A classic of Italian appetizers. Replace chicken with quality tuna in oil and sun-dried tomatoes with thinly sliced artichokes in oil. This variant always pleases everyone!

  • Can I use sandwich bread with the crust?

    We recommend using long white bread without crust for a more elegant and soft result. If you only have bread with crust, make sure to remove the dark edges with a knife before starting the assembly, otherwise, the loaf will be difficult to cut and less pleasant to the palate.

  • What can I use instead of chicken?

    If you don’t have leftover chicken breast, you can replace it with well-drained tuna in oil or with chopped cooked ham combined with cream cheese. The result will be just as creamy and flavorful!

  • The loaf falls apart when I cut it, how can I avoid this?

    The secret is the resting time and temperature. Make sure the loaf is nicely chilled from the refrigerator before cutting. Also, try not to overdo the mayonnaise layer: it should help bind the ingredients, not make them slide apart.

  • Can I substitute mayonnaise?

    If you’re looking for a lighter version, you can substitute part of the mayonnaise with plain Greek yogurt or increase the amount of cream cheese. However, keep in mind that mayonnaise helps keep the bread moist and flavorful, so we recommend leaving at least a thin layer between the layers.
