  • 4 potatoes (large)
  • 2 peppers
  • 3 zucchini
  • 2 eggplants

  • 4 tablespoons extra virgin olive oil
  • 3 carrots (or a piece of squash)

How to prepare the sausage and vegetables casserole

  • Preparing the sausage casserole is really simple and quick.

    First, peel the onions, carrots, and potatoes, then cut them into chunks about 3/4 inch (2 cm) on each side.

  • Clean the other vegetables and cut them like the potatoes, put all the vegetables in a bowl, season with salt, pepper, oregano, and olive oil, and mix well.

  • Preheat the oven to 392°F (200°C).

    Pour the vegetables into a baking dish, trying to make a single layer of vegetables, place the sausages on top, pricked in several places with a fork.

  • Bake the sausage casserole for at least 30 minutes.

    If you want, you can turn the vegetables halfway through cooking with a slotted spatula to brown them all over.
