To make the sausage, mortadella, and cheese roll, you need very little: few ingredients, little time, and few preparations to have a main dish or unique meal that’s finger-licking good. Everyone will love this sausage roll, as it’s very tasty even at room temperature. So go ahead and prepare it, adding vegetables of your choice, so each time you’ll have a different dish by maybe adding your favorite seasonal vegetable.
A roll of puff pastry, some sausages, some melting cheese, and just a little time for a delicious second course that you can prepare in advance and bake before eating, or store it in the fridge from morning to evening and just pop it in the oven to warm it up.

Ingredients for Sausage, Mortadella, and Cheese Roll
- 1 puff pastry (rectangular)
- 2 sausages
- 4.2 oz mortadella (in one slice)
- 5.3 oz scamorza (or caciocavallo)
- 3 tbsp milk
- 2 tbsp poppy seeds
- Half onion
- 1 tbsp extra virgin olive oil
How to Prepare the Sausage, Mortadella, and Cheese Roll
To prepare the sausage, mortadella, and cheese roll, first remove the casing from the sausages and crumble them with your hands.
Chop the onion very finely and sauté it in a pan until it becomes translucent with a little extra virgin olive oil.
Then add the crumbled sausage and cook for at least 10 minutes stirring with a wooden spoon.
Turn off the heat and let cool.
Meanwhile, slice and then cut both the cheese and the mortadella into strips and then into pieces, and set aside until the sausage is lukewarm.
Preheat the oven to 390°F, unroll the puff pastry keeping it with its parchment paper.
Mix now the sausages with the mortadella and cheese and spread the mixture over the center part of the pastry, leaving the edges free.
Close one flap first, on the other flap make cuts to create strips then place it over the newly folded pastry.
Seal the edges well and brush with milk.
Sprinkle with poppy seeds and bake on the middle shelf of your oven, bake for at least 18/20 minutes checking the degree of browning.
If it darkens too much, lower the oven temperature or cover with a sheet of parchment paper.
Remove from the oven when golden brown, let rest for 5 minutes before slicing and serving.
Storage, Tips, and Variations
The roll can be stored in the refrigerator for 2 days in an airtight container.
You can freeze the roll once cold, either whole or sliced.

You can add seasonal vegetables, cooking them in a pan before adding the sausages.
