- 18 oz Brussels sprouts
- 21 oz sausages
- 3 tbsp extra virgin olive oil
- 1 clove garlic
- 1 fresh chili pepper
- 1 tbsp parsley
- 2 pinches salt
Preparation of Sausages with Brussels Sprouts in a Pan
To prepare the sausages with Brussels sprouts, first remove the tougher outer leaves of the sprouts then make a cross-cut at the base to allow them to cook evenly.
Wash the Brussels sprouts very well and steam them for 5 minutes.
Steaming helps to retain all the properties that would otherwise be lost in the cooking water and speeds everything up.
Meanwhile, chop the garlic clove along with the chili pepper and cut each sausage into 3 or 4 pieces depending on their size.
Sauté garlic and chili in a pan with some EVO oil for a few moments, then add the sausages, brown them on all sides for a few minutes, then incorporate the pre-cooked sprouts.
Season with some salt, lower the heat, cover with the lid and cook for 10 minutes.
Uncover, stir, and poke a few sprouts to test the tenderness; if they lack tenderness, extend the cooking for another 5 minutes, turning often to flavor well.
