To prepare this Sautéed Potatoes and Radicchio side dish, you can choose the red radicchio you like most; I usually use the Treviso tardivo radicchio, which I adore, but other varieties like early red are also perfect.

With radicchio, you can prepare many delicious dishes such as radicchio and mushroom omelet, a simple second course loved by everyone, or a first course like radicchio cannelloni.

Ingredients for Sautéed Potatoes and Radicchio

  • 12 oz Treviso red radicchio IGP, tardivo
  • 1 lb potatoes
  • 1 onion
  • to taste salt
  • 3 tablespoons extra virgin olive oil
  • to taste chopped parsley (fresh or frozen)

Preparation of Sautéed Potatoes and Radicchio

  • To prepare Sautéed Potatoes and Radicchio, first wash and peel the potatoes, then cut them into chunks about 3/4 inch.

  • Steam them or boil them in unsalted water for a few minutes just long enough to soften them.

  • Meanwhile, peel the onion and slice it not too thinly, remove the end of the radicchio and chop it coarsely.

  • In a large high-sided skillet, sauté the onion until transparent with 3 tablespoons of extra virgin olive oil, then add the radicchio.

  • Mix with the onions, salt, and let stew slowly, stirring occasionally for 6 or 7 minutes, then drain the potatoes and add them to the skillet.

  • Mix again and continue cooking until the potatoes are tender and the radicchio is well wilted.

  • Adjust the salt at the end of cooking; it will take about 20 minutes in total, sprinkle with fresh chopped parsley before serving.
