Ingredients for the savory eggplant and tomato tart

  • 1 sheet puff pastry
  • 1 round eggplant
  • 10 cherry tomatoes
  • 100 ml fresh liquid cream
  • 1 egg
  • 5 oz fresh caciottina cheese (or caciocavallo cheese)
  • 2 pinches salt
  • 2 pinches pepper

Preparation of savory eggplant and tomato tart

  • Prepare the savory eggplant tart starting with the eggplants. Trim them, wash them, and cut them into not-so-thin slices.

  • Grill the eggplant slices on a cast iron grill for a few minutes on each side and set aside to cool slightly.

  • Slice the cheese, beat the egg together with the cream, salt, and pepper.

    Preheat the oven to 392°F.

  • Unroll the puff pastry keeping its parchment paper and place it in a low, wide pan.

  • Make a layer of grilled eggplants, salt, and pepper, cover with cheese slices and half of the cherry tomatoes cut into pieces.

  • A second layer of eggplants and more cherry tomatoes and cheese to cover the surface.

  • Incorporate the beaten egg with the cream and any leftover pieces of cheese.

  • Bake the savory tart for 30 minutes or until you see the cheese melted and the surface slightly golden.
