  • 6.3 oz pumpkin (already cooked)
  • 1.5 cups all-purpose flour
  • 1 packet baking powder
  • 1 pinch nutmeg
  • 2 eggs (large)
  • 2 pinches salt
  • 2 pinches black pepper
  • 1.75 oz mozzarella
  • 2.5 oz walnut kernels (chopped)
  • 3.4 tbsp milk
  • 2 tbsp extra virgin olive oil

Preparation of savory muffins with pumpkin

  • Preparing the savory muffins is very simple.

    First of all, clean the pumpkin, cut it into chunks and cook it until it becomes tender.

  • Mash the pumpkin into a puree and set aside.

  • In a bowl mix the flour, instant baking powder, salt, pepper, and nutmeg with the finely chopped walnuts.

  • Add the eggs, milk, and oil and mix with a fork to combine.

  • Lastly, add the pumpkin puree and mix very well.

  • Preheat the oven to 392°F in static mode.

  • Fill 6 muffin molds up to 3/4 of their capacity with the savory muffins mixture.

  • Cut the mozzarella into pieces and insert it into each muffin, pushing it in slightly.

  • Bake and cook the savory pumpkin muffins on the middle oven rack for 12/15 minutes.
