- 2 cups all-purpose flour
- 1/2 cup butter
- 1/4 cup water (cold from the fridge)
- 1 tsp salt
- 2 red onions from Tropea
- 1 tbsp sugar
- 1 pinch salt
- 2 tbsp extra virgin olive oil
- 2 tbsp herbs (thyme, oregano, rosemary)

Preparation of Savory Tarte Tatin with Onions
To prepare the Savory Tarte Tatin with Onions, first prepare the puff pastry by placing the flour together with the salt and sugar in a bowl (or in your food processor).
Cut the butter into pieces and add it. If preparing in a bowl, work quickly with your fingertips until you have a sandy texture.
Otherwise, in the food processor, pulse briefly until you have a coarse sand-like texture.
Add the very cold water from the fridge and incorporate it with a rubber spatula as quickly as possible.
Also do this quickly with the food processor.
Turn the mixture onto the work surface and form a compact and smooth ball.
Let it rest in the refrigerator for at least 1 hour.
In the meantime, while the puff pastry rests in the refrigerator, wash, trim, and peel the onions.
Cut them into slices 1/4 inch thick.
Line a round tart pan with parchment paper, then sprinkle the sugar, salt, and herbs on top.
Drizzle with extra virgin olive oil and cover everything with the onions, trying to leave as few gaps as possible.
Preheat the oven to 350°F in static mode.
Take the puff pastry from the refrigerator and roll it out between 2 sheets of parchment paper with the rolling pin.
Cover the onions with the puff pastry making it adhere well to the edges, trying to go between the onions and the edge of the pan.
Prick with a fork and bake.
Bake the Savory Tarte Tatin on the lower rack of the oven for 30 minutes.
Remove from the oven, turn the mold onto the serving plate, and gently remove the underlying parchment paper.
Serve it still warm, cut into wedges.
