Ingredients for Shortbread and Jam Cookies

  • 2 3/4 cups all-purpose flour
  • 9 tbsp butter (cold from the fridge)
  • 1/2 cup sugar
  • 1 egg (medium)
  • 1 tsp lemon zest (or orange zest)
  • to taste jam (as desired)

Preparation Shortbread and Jam Cookies

  • To prepare the Shortbread and Jam Cookies, place the sifted flour and very cold butter cut into pieces in a bowl.

  • Work with your fingertips until you have a crumbly mixture, then add the sugar and the egg, and work very quickly.

  • Finally, incorporate the lemon or orange zest as desired, turn the mixture out onto the work surface, and mix quickly.

    Form a ball and wrap it in plastic wrap, letting it rest in the refrigerator for at least 2 hours.

  • After the resting time, roll out the dough between 2 sheets of parchment paper to a thickness of 1/8 inch.

    Use a cookie cutter or a glass to make large or small disks as you prefer, and make a hole in the center of half of the cookies.

  • Fill the disks without the hole with your chosen jam and cover by aligning the edges with the other disks.

  • Preheat the oven to 350°F in static mode and line a baking tray with parchment paper.

  • Arrange the Shortbread Cookies well spaced and bake them in the middle rack of the oven for 18/20 minutes, checking the doneness.

  • Depending on the type of oven, it may take a few more minutes or less. The important thing is not to burn them on the surface.

  • Once baked, remove them from the oven, let them cool before dusting with powdered sugar.
