Ingredients for Sicilian Cauliflower Patties

  • 1 cauliflower (medium large)
  • 1 egg
  • 4 anchovies in oil
  • 1/4 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • as needed breadcrumbs
  • 2 pinches salt
  • 3 oz provolone (also spicy)
  • as needed black pepper (ground)
  • as needed peanut oil (for frying)

Preparation of Sicilian Cauliflower Patties

  • To prepare the Sicilian Cauliflower Patties first remove the florets from the cauliflower.

    Set aside the stalk and leaves which you can use to make cauliflower cream

  • Steam the cauliflower florets for 4 minutes then drain them and place them in a large bowl.

  • Mash the cauliflower with a fork or potato masher, add the egg and mix.

    Finely chop the anchovies and add them to the bowl along with the grated Parmesan cheese.

  • Cut the provolone into very small cubes, add it to the bowl, season with salt and pepper, and if desired, add some nutmeg.

    Add the flour.

  • Mix everything very well and add enough breadcrumbs to form a homogeneous but not too hard mixture.

    Let it rest in the refrigerator for at least 30 minutes.

  • After the resting time, take the bowl out of the refrigerator and form many small flattened patties with your hands.

  • Heat plenty of oil for frying, then quickly pass the patties in more breadcrumbs and fry them a few at a time.

  • Once well browned on one side, turn them over with a slotted spoon and let them brown on the other side.

    Drain them with a slotted spoon and arrange them on a deep plate with absorbent paper to remove excess oil.

  • Serve them hot or warm.

How to Store Sicilian Cauliflower Patties

You can store them in the refrigerator for 1 day in an airtight container, they are also delicious at room temperature.
