Ingredients for Simple Bozner Sauce
- 2 hard-boiled eggs (medium-large)
- 1 teaspoon mustard
- 1/4 cup sunflower seed oil
- to taste chives
- 1 teaspoon white wine vinegar
- 2 pinches salt
- to taste black pepper (ground)

- 1 Hand Blender
Steps
Cook the eggs in a small pot for 8 minutes from boiling, then cool them down and peel them.
In the blender jug, place the chopped eggs, mustard, and other ingredients (except the chives) and blend.
You should obtain a smooth and fairly thick cream; if it turns out too hard, add a bit of oil and blend again.
Finely chop the chives after washing and drying them, then add to the Simple Bozner Sauce and mix.
Place the sauce in a bowl, cover with plastic wrap, and store in the refrigerator until ready to use.
Storage, Tips, and Variations of Bozner Sauce
The Bozner Sauce keeps in the refrigerator for 2-3 days covered with plastic wrap.

You can sieve the hard yolks and then chop the whites with a knife and add the other ingredients simply by mixing with a kitchen spatula for a coarser sauce.
If you prefer a less intense mustard flavor, you can add a few well-crushed mustard seeds.
Prefer a lighter sauce? Decrease the amount of oil and add some vegetable broth.
