  • 1.3 lbs leeks
  • 3.5 oz breadcrumbs (or stale bread)
  • 3 tablespoons grated Parmesan cheese (or Grana Padano)
  • 3 tablespoons extra virgin olive oil
  • 2 pinches salt
  • 1 bunch parsley
  • 1 teaspoon dried oregano

  • Start by washing the leeks, removing the tougher outer leaves and the roots, then cut them into slices a little over 1 inch.

  • You can use the white part and also the lighter green part, leaving the dark green part for other preparations.

  • If you want to use stale bread, chop it coarsely with a chopper, otherwise place the breadcrumbs in a bowl.

    Add the grated cheese, the chopped herbs (fresh or dried), and the extra virgin olive oil, and mix everything very well.

  • Preheat the oven to 190°F static mode and drizzle a baking dish with a little oil, then arrange the leek rounds, and salt them.
