In fact, all you need is a bowl and a spatula or simply your hands to prepare it.

  • First of all, in a glass, dissolve the fresh brewer’s yeast (or the dry one) in a little room temperature water.

You will see after 10/15 minutes that it starts to bubble.

  • Mix the flour with the semolina in a large bowl then add the already dissolved yeast.

Start kneading with your hands or with a rubber or wooden spatula and slowly incorporate the remaining water.

  • Lastly, add the salt and if you want a drizzle of extra virgin olive oil but it’s not essential.

  • Once you have a smooth and compact dough, place it to rise in a large bowl covered with film.

If it’s warm at home you can leave it away from drafts otherwise put it in the oven.

  • After 6/7 hours the simple pizza dough should be twice its volume so take it, deflate it gently on the work surface.

Divide it into 3 more or less equal parts.

  • Roll out the dough using your fingertips from the center outwards and place it in a baking sheet to rise again for at least 1 hour.

  • Only before baking top as desired and bake in a very hot oven at 450°F.

If you want to make bread just shape the rolls or one single loaf and let it rise on a baking sheet, make cuts on the surface before baking.
