Ingredients for Skillet Apple Omelette

  • 2 Golden apples
  • 3.5 tbsp butter
  • 3/4 cup all-purpose flour
  • 1/4 cup rice flour (Or rice starch or potato starch)
  • 1/4 cup sugar
  • 1/2 cup milk (fresh whole)
  • 2 eggs (large)
  • 1.5 oz raisins
  • 1 lemon (juice)
  • 1 packet baking powder
  • 1 pinch ground cinnamon

  • 1 Skillet 8.5 inches in diameter
  • 1 Peeler
  • 1 Corer
  • 2 Bowls

Preparation of Skillet Apple Omelette

  • To prepare the Sweet Skillet Apple Omelette, first peel the apples (I do it with a peeler) and remove the core.

    Then cut the apples into 1/2 inch cubes, sprinkle with lemon juice, and set aside in a bowl.

  • In a second bowl, crack the eggs, mix them with the milk, and add the two flours.

    Add the baking powder and stir with a whisk until you have a smooth batter that’s not too thick.

  • In an 8.5-inch skillet, add the butter pieces and sugar on high heat until melted.

  • Add the apple cubes and raisins to the skillet and caramelize for 5 minutes, stirring with a rubber spatula.

    Flavor with cinnamon.

  • When the sugar starts to darken, add the previously made batter to the skillet.

  • Quickly stir with a wooden spoon to incorporate the apples into the batter.

  • Lower the heat to minimum, cover with the lid, and cook the skillet apple omelette for the first 10 minutes.

    Detach the edges and check the browning by slightly lifting the edge with a spatula.

  • Once it is nicely browned, flip it with the help of a flat plate and finish cooking on the other side, still on low heat, for another 10 minutes, always with the lid on.

  • Once cooked, gently remove it from the skillet, sprinkle with powdered sugar, or cover with your favorite jam.
