Ingredients for Skillet Roasted New Potatoes

  • 1.1 lbs new potatoes
  • 1/4 cup water
  • 1.76 oz butter
  • 2 pinches salt
  • to taste black pepper (freshly ground)
  • 1/2 tsp dried oregano
  • 1 sprig rosemary
  • to taste thyme (fresh or dried)

Steps

  • For the potatoes: Wash them well under running water with their skins on, then scrub them well to remove any impurities.

  • How to choose potatoes: Choose small potatoes of roughly the same size; you can also use red-skinned ones, preferably organic.

  • Cook the potatoes: In a wide pan that can hold all the potatoes, arrange them without overlapping, and cover with 1/4 cup of water.

  • Cover with a lid and cook for 10 minutes, then remove the lid.

  • Dry out the water: On high flame and without a lid, let the water dry, then add the cold butter from the fridge.

  • Sauté the potatoes: Sauté the potatoes on high flame for another 10 minutes, browning them on all sides.

    DO NOT turn them with knives or forks to avoid puncturing them; just toss them in the pan so they turn by themselves.

  • Prepare the aromatic herbs and finish cooking: Meanwhile, chop the aromatic herbs, then season the potatoes with salt and pepper once cooking is finished.

    Season off the heat with the aromatic herbs and serve.

Storage, Tips, and Variations for Skillet Roasted New Potatoes

If you have potatoes of different sizes, cut the larger ones in half.

You can add 1 whole crushed clove of garlic 🧄 in the pan to give more flavor.

Use the aromatic herbs 🍃 you prefer based on what you have in the pantry.

If you have fresh aromatic herbs, wash, dry, and chop them, adding them to the pan just before turning off the heat.

The roasted potatoes can be stored in the refrigerator for 2 days in an airtight container.
