Ingredients for the Spiral Apple Tart

  • 2.75 cups all-purpose flour
  • 2/3 cup sugar
  • 2 egg yolks
  • 1 packet vanillin
  • 9 tbsp butter
  • 4 Renette apples
  • 1 lemon (juice only)
  • 2 pinches ground cinnamon
  • 1/3 cup powdered sugar
  • 3.5 tbsp butter (melted)

How to Prepare the Spiral Apple Tart

  • Prepare the spiral apple tart by starting with the pastry dough, so in a bowl place the flour and the very cold butter cut into cubes.

  • Work quickly with your fingertips until you have a sandy mixture then incorporate the sugar and egg yolks.

  • Knead quickly with your hands, turn the mixture onto the pastry board and form a ball, cover it with plastic wrap and let it rest.

  • Meanwhile, peel the apples, remove the core, and slice them into thin wedges, a few millimeters thick.

    Place them in a bowl and sprinkle with lemon juice.

  • Preheat the oven to 392°F, static mode.

    Roll out the dough with a rolling pin to a thickness of 1/8 inch and cut strips as tall as the mold you intend to use.

  • Line the mold with parchment paper and start from the outer edge by placing a strip of pastry, then the apple slices pressed well against the pastry.

  • Continue with pastry and apples until reaching the center of the mold.

    Sprinkle generously with ground cinnamon.

  • Melt the butter in a bain-marie and spread it over the tart before baking.

  • Bake the spiral apple tart on the middle shelf for at least 30 minutes, checking the cooking level as each oven is different.

The spiral apple tart can be stored under a glass dome for 3 days.
