Steamed asparagus with hard-boiled eggs and Parmesan is the perfect side dish for any main course, simple and quick to make. We chose to use the fine white ones typical of some areas of Veneto; they are very tender, not bitter, and practically have no waste.
The fine white asparagus are also perfect to eat raw. When steamed, they’re particularly good because they retain all their properties and cook very quickly; it only took us 5 minutes and they were perfect.
Then, once cooked, place them on a serving dish, drizzle with melted butter, salt, black pepper, and sprinkle with crumbled hard-boiled eggs and Parmesan. We decided to decorate them with fresh chopped dill.
You can replace the dill with fennel or chives, which go very well with asparagus.

- 2.2 lbs fine white asparagus
- 2 eggs
- 3 tbsps butter
- 1/2 cup grated Parmesan
- 2 pinches salt
- to taste black pepper (ground)
- to taste dill (or fennel or chives)

Steps for Steamed Asparagus with Hard-Boiled Eggs and Parmesan
First, clean the asparagus by removing the tougher bottom part, then use a peeler to remove the tougher filaments.
Steam them in the appropriate basket with 2 fingers of water below. It will take about 5 minutes or a bit longer if using the stove.
We used the microwave steamer basket. At 750 w it took us 2 minutes, and we cooked them in 2 batches because they didn’t all fit in the basket.
Meanwhile, in a small pot, boil the eggs. It takes 8 minutes from the boil, then let them cool and peel them.
Melt the butter in a bain-marie or in the microwave, then place the asparagus on a serving dish, salt, pepper, and drizzle with the melted butter.
Finely chop the hard-boiled eggs and sprinkle them over the asparagus, covering them well. Add grated Parmesan and decorate with chopped fresh dill or chives.
Storage Advice and Variations for Steamed Asparagus with Hard-Boiled Eggs and Parmesan
You can also use green asparagus, paying attention to the cooking times which will definitely be longer.
I recommend always steaming asparagus so they don’t absorb water and remain cooked but crunchy.
If you prefer, you can drizzle them with extra virgin olive oil instead of butter.
Steamed asparagus can be stored in the refrigerator, well sealed in an airtight container, for 2 days.
