The strawberry paradise cake, is very easy to make, very fragrant, and ideal during the period when strawberries start to become ripe.
It’s a cake that always invites tasting, both after meals and as a snack, encouraging everyone to try it and make it again because it’s so good.
You can prepare the base, the cake, even the day before and fill it later, so the strawberries will be fresh and won’t release their juice into the cream.
We made the strawberry paradise cake in a rectangular base to then cut into cubes, but you can easily make it in a round mold to cut into slices and serve like a regular cake.
This cake is characterized by being so moist that it melts in your mouth, it does not need soaking like others, for example the Sponge Cake.

Ingredients for the strawberry paradise cake
- 1 1/4 cups all-purpose flour
- 3/4 cups cornstarch (maizena)
- 4 eggs (large)
- 1 cup sugar
- 13 tbsp butter (soft)
- 1 tbsp baking powder
- 9 oz strawberries
- 5 tbsp sugar
- 1/3 cup condensed milk
- 1 cup cups fresh liquid cream

How to prepare the strawberry paradise cake
Prepare the strawberry paradise cake by sifting together flour, cornstarch, and baking powder.
Leave the butter at room temperature for at least 30 minutes before using it.
With the electric whisks, beat the butter with the sugar until you have a frothy and white mixture.
Incorporate with the whisks on, one egg at a time, without adding the next until the previous one is absorbed.
Add the flour in several batches, always with the whisks on.
Meanwhile, preheat the oven to 350°F, butter and flour the pan that, if you want, you can use a round springform pan of 9 to 10 inches in diameter.
Pour the mixture into the pan and bake for 40 minutes, checking after 30 minutes with a wooden skewer; if it comes out dry, the strawberry paradise cake is ready.
Remove from the oven and let cool before removing it from the pan.
Meanwhile, wash and dry the strawberries, then cut them into pieces, leaving some only halved with the stem for decorations.
Place the strawberries in a deep dish and sprinkle them with sugar, leaving them until ready to use.
Whip the fresh cream with the electric whisks until very firm, then add the condensed milk and finish whipping for a few seconds.
Once the base is cold, remove it from the pan, then cut it in 2, soak the base with the liquid released from the strawberries.
Mix the chopped strawberries with the paradise cream, then fill the cake, cover with the other half, making a slight pressure to make it adhere.

Storage of strawberry paradise cake
The paradise cake keeps in the refrigerator in an airtight container for 3 days.
You can freeze the cake, also divided into portions, to take it out whenever you want, leaving it at room temperature 1 hour before enjoying it.
