With few ingredients, you will have not the usual bruschetta with topping on top but a bruschetta with a hole in the center where you insert the topping and cook in the pan in no time.

Ingredients for Stuffed Chicken Bruschetta
- 1.1 lbs chicken breast (sliced)
- 8 slices rustic bread (or bruschetta bread)
- 2 eggs
- 2 pinches salt
- 1 clove garlic
- 1 tsp parsley
- 3 tbsps extra virgin olive oil
- 2 pinches black pepper
- 1.8 oz Asiago cheese (fresh)

- 1 Pan – non-stick – diameter 10 inches
How to Prepare Stuffed Chicken Bruschetta
Prepare the stuffed chicken bruschetta by cutting the chicken breast into not too thin slices, then in a bowl mix oil, salt, pepper, garlic, and parsley and season by massaging the chicken slices.
Cook the chicken slices 4 minutes per side until well cooked, then drain and let them cool.
Meanwhile, use the pastry ring to make a hole in the center of each bread slice.
Finely chop the freshly cooked chicken slices and place them in a bowl, incorporate the eggs and grated cheese, mix to flavor.
In the same pan where you cooked the chicken slices, place the bruschetta slices one at a time, and fill the center with the chicken and egg mixture.
Let cook for at least 4 minutes, turn the chicken bruschetta with a spatula, and continue cooking on the other side.
While cooking the other bruschetta, keep them warm perhaps between 2 plates and serve the stuffed chicken bruschetta accompanied by fresh cherry tomatoes.

You can store stuffed chicken bruschetta for 1 day in the refrigerator and heat them quickly in the pan before eating.
