Stuffed zucchini with meat is a truly tasty and easy-to-prepare main course.

You can also make them in advance and put them in the oven just before sitting at the table, or cook them and keep them in the fridge for the next day, so you can heat them in the oven for about fifteen minutes and they’re ready to go.
A recipe you can vary depending on what you have in the fridge, for example, I used cooked ham because it was in the fridge asking for mercy, but they will also be very good with bologna or with the addition of some other vegetables to your liking.

Ingredients for Stuffed Zucchini with Meat and Ham

  • 4 zucchini
  • 9 oz ground meat
  • 4.2 oz cooked ham
  • 2.8 oz Parmigiano Reggiano DOP (grated)
  • 1 egg (medium)
  • 1.06 oz stale bread
  • 3 tbsp milk (to soften the bread)
  • 2 pinches salt
  • 2 tbsp extra virgin olive oil

How to Prepare Stuffed Zucchini with Meat

  • Start preparing the stuffed zucchini with meat by washing and drying the zucchinis.

    Cook them for 4 minutes in a pot with plenty of boiling water, then drain and let them dry on a towel.

  • Scoop them out with a corer or a teaspoon, removing the ends.

    Salt them internally.

  • Meanwhile, prepare the filling by grinding the ham with a grinder.

    Soften the crumbled bread in the milk.

    Place the ground meat in a large bowl with the rest of the ingredients, season, and mix well to combine the filling.

  • Generously stuff the zucchini with the prepared mixture, sprinkle with more grated cheese, and drizzle with a little extra virgin olive oil.

  • Place the stuffed zucchini on a baking sheet drizzled with a little oil and bake for 30 minutes in the preheated oven at 356°F.
