Ingredients for Super Easy Grilled Eggplants with Tuna Sauce
- 3 eggplants
- 2 eggs (hard-boiled)
- 5.6 oz canned tuna in oil (well drained)
- 2 fillets anchovies in oil
- 1 tbsp capers
- 2 pinches salt
- to taste extra virgin olive oil

Preparation of Grilled Eggplants with Tuna Sauce
Wash, remove the stem, and cut the eggplants into thick slices.
In a small saucepan, boil the eggs for 8 minutes.
Grill the eggplant slices for a few minutes on each side until softened (do not add oil) and place them on a plate as they are ready.
Let them cool.
When the eggs are hard-boiled, peel them and place them in the immersion blender cup along with the drained tuna, anchovies, and capers, and blend.
If you want a smoother and more pourable tuna sauce, gradually add a little extra virgin olive oil, taste and adjust the salt if needed.
Place the grilled eggplants on a serving platter, spread the tuna sauce over them, and garnish with additional capers.
