Ingredients for the Sweet Brioche Bread
- 3.2 cups all-purpose flour
- 0.5 oz fresh yeast
- 0.6 cup sugar
- 2 egg yolks
- 1 egg
- 0.5 cup butter
- 1/3 cup milk
- to taste sesame seeds (or poppy seeds or both)
- 1 egg yolk (For brushing)

Preparation of Sweet Brioche Bread
To prepare the brioche bread, first dissolve the fresh yeast in a little bit of lukewarm milk.
Then in the bowl of the stand mixer or food processor, add the flour, the dissolved yeast, and start to mix.
Gradually add the sugar and the remaining milk little by little while mixing until you have a smooth and rather sticky dough.
Now add the egg yolks one at a time, mix until they are well absorbed, then add the whole egg, and continue to mix.
Once the eggs are absorbed into the dough, add the softened butter using a spoon.
Continue working the dough to ensure the butter is absorbed, then add more butter.
The dough will be quite sticky, which is fine. Now transfer it to a clean bowl, cover with plastic wrap, and let it rise in a warm place for at least 1 hour.
Take the dough, turn it onto a lightly floured surface, and quickly shape it into a log using a spatula.
Divide the log into 3 equal parts, then braid it and place it in a greased and floured loaf pan.
Lightly beat the remaining egg yolk and brush it on the surface of the sweet brioche bread.
Sprinkle with sesame seeds and allow it to rise again until doubled in a warm, draft-free place.
The second rise will take at least 4 hours; the sweet brioche bread should reach the top of the pan. Preheat the oven to 350°F and bake for 35-40 minutes, making sure it doesn’t burn on top.
If it browns too much on top, you can cover it with parchment paper or aluminum foil after 20 minutes of baking.
Once baked, remove the brioche bread from the oven and let it cool in the pan.
How to store sweet brioche bread
The brioche bread can be kept in the pantry inside a paper bag for 3 days.
You can freeze it already sliced so that you can take out slices as needed.
