SWEET FRITTOLE THE VENETIAN CARNIVAL FRITTERS

The sweet frittole, the Venetian carnival fritters, the best in the world, are made with an easy leavened dough and are filled with raisins and sometimes with small apple pieces, they are truly delicious, one leads to another, so make plenty and if you are really indulgent roll them in granulated sugar right after frying to make them even more indulgent.

I always make carnival fritters both with raisins and apples, sometimes together and other times like these, I made half with raisins and half with apples so everyone can choose the sweet frittole they like best, obviously, they disappeared in a flash.

Ingredients for sweet frittole the Venetian fritters

  • 2 cups all-purpose flour
  • 7 oz milk
  • 1/4 cup sugar
  • 1 1/2 tbsp butter
  • 0.28 oz fresh yeast
  • 1 egg
  • 2 tbsps rum
  • 1 tsp lemon zest (grated)
  • 3 1/2 oz raisins
  • 7 oz apple (in small pieces)

Preparation of sweet frittole

  • To prepare the sweet frittole, soak the raisins, melt the butter and slightly warm the milk to make it lukewarm.

  • In a bowl, dissolve the yeast in the milk, then incorporate all the other ingredients and mix everything with a whisk to dissolve any lumps.

  • Drain and squeeze the raisins and add them to the batter. If you decide to use apples as well, cut them into small pieces and incorporate them too.

  • Lastly, mix in the grated lemon zest, cover the dough with plastic wrap, and let it rise in a warm place for at least 2 hours.

  • Heat plenty of oil to 338°F for frying, then use a spoon to take small portions of dough and, with the help of another spoon, slide the sweet frittole into the oil.

  • Let them brown, you’ll see they will quickly puff up, then turn them with a slotted spatula and let them brown on the other side.
