Sweet Protein Pancakes

The sweet protein pancakes are the perfect breakfast or snack if you want to eat healthy but with a lot of taste. We didn’t add sugars because we drizzle them with good honey before consuming, but you can add it if you want to eat them plain.

These sweet protein pancakes are also excellent when served with fresh or homemade syruped fruit that you can prepare following this recipe.

Ingredients for Sweet Protein Pancakes

  • 1 egg
  • 6.8 oz soy milk (or oat or other plant-based alternative)
  • 1/4 cup almond flour
  • 1/2 cup buckwheat flour
  • 1/2 cup rice flour
  • 1 cup oat flour
  • 1 pinch salt
  • 1 tbsp sunflower oil
  • as needed honey (or maple syrup or fresh fruit of choice)

Preparation of Sweet Protein Pancakes

  • Preparing Protein Pancakes with Oat Flour is quite simple and fast, first, you need a blender.

  • Place all the ingredients into the blender jug and blend for a few seconds until a lump-free batter forms.

  • Now you can cook the Protein Pancakes, heat a pan very well and melt a small knob of butter.

  • Use a ladle to pour the batter into the pan, and you will see it naturally takes on the classic round shape of pancakes.

  • I recommend cooking a maximum of 3 pancakes at a time because they spread out, and if you put too many, they will stick to each other.

  • Cook the oat pancakes for 3 minutes on medium-high heat, then flip them with a spatula and cook for another 2 or 3 minutes on the other side.

  • Serve them stacked and drizzled with honey, maple syrup, or fresh or syruped fruit.
