The tasty turkey rolls recipe is a simple and very delicious second course, in my case stuffed with roasted peppers and melted cheese.
Cooking these turkey rolls with this tasty recipe in a pan ensures the meat is really tender and not at all dry. The secret? Searing the meat over high heat so its juices remain inside.

Ingredients for Tasty Turkey Rolls
- 8 slices Turkey Breast
- 2 Red Peppers
- 3.5 oz Provolone (or other melting cheese)
- 1 glass Dry White Wine
- to taste Breadcrumbs
- 3 tablespoons Extra Virgin Olive Oil
- 2 teaspoons Oregano
- to taste Salt
Preparation of Tasty Turkey Rolls
To prepare the tasty turkey rolls recipe, first roast the peppers to easily remove the skin. You can do this in the oven for 20 minutes or in a pan as we do.
Once the peppers are ready, peel them and set them aside.
Cut the provolone or your chosen cheese into slices and then into sticks.
Take the turkey breast slices and if they’re too thick, flatten them slightly with a meat mallet.
Season with a pinch of salt and sprinkle with the seasoned breadcrumbs.
Cut the peppers into strips roughly the size of each turkey slice, then place them over the breadcrumbs.
Season with salt and a little oregano (if you prefer, you can use fresh parsley) and also place the cheese slice on top.
Now roll each turkey slice onto itself and secure it with toothpicks, quickly passing them through the seasoned breadcrumbs.
At this point, heat the extra virgin olive oil in a wide pan with high edges. When the oil starts to sizzle, brown the turkey rolls on all sides until they are slightly golden, then pour in the white wine.
Let the alcohol evaporate, lower the heat, and finish cooking the turkey rolls for another 15 minutes, turning them occasionally.
If you find the cooking liquid dries up too much, you can add a few tablespoons of water to prevent the meat from drying out.
After the time is up, turn off the heat, let rest for 5 minutes, sprinkle everything with more oregano, and let rest a moment before serving.

You can freeze turkey rolls if you have used fresh products, once cooled and placed in suitable freezer containers.
Can I use other vegetables?
Sure, depending on the season and what you have in the freezer, you can use sautéed spinach, grilled zucchini, blanched turnip greens, or even sautéed radicchio.
Can they be grilled?
Yes, they can be grilled, but I suggest skewering 3 or 4 of them on skewers so you can cook and turn them easily.
What other cheese can be used?
Any other soft cheese like scamorza, for example.
