Ingredients for preparing Three Chocolate Panna Cotta

The ingredients are for 2 large 8.5 oz cups each; with the same doses, you can prepare 4 small glasses

  • 5.3 oz dark chocolate
  • 0.63 cups fresh liquid cream
  • 0.7 oz powdered sugar
  • 2.1 tbsp butter
  • 1 sheet gelatin sheets (isinglass)
  • 4.2 oz milk chocolate 40%
  • 0.63 cups fresh liquid cream
  • 1 sheet gelatin sheets
  • 0.63 cups fresh liquid cream
  • 2.8 oz white chocolate
  • 0.5 oz powdered sugar (optional)
  • 0.33 cups milk
  • 2 sheets gelatin sheets
  • to taste almonds (chopped or sliced)

Tools

  • 1 Hand whisk

Preparation of Three Chocolate Panna Cotta

  • To prepare the three chocolate panna cotta proceed in layers, so first make the dark chocolate panna cotta.

    Soak the gelatin in cold water for at least 10 minutes.

  • Chop the dark chocolate.

  • In a small pot, mix the cream with the sugar and bring to the heat until it almost boils.

  • Remove the pot from the heat and add the dark chocolate, butter, and softened and squeezed gelatin.

  • Mix with the whisk by hand until you get a smooth and homogeneous mixture.

    At this point, take 2 glasses, set them at 45° on a base that keeps them steady, we used muffin molds.

  • Then pour the panna cotta over the chocolate, making the first layer diagonally, and place it in the fridge for at least 1 hour.

  • Soak the gelatin in a little cold water in a small bowl, and chop the milk chocolate.

  • In a small pot, heat the fresh cream until it just reaches a boil, then remove the pot from the heat, add the squeezed gelatin and chopped chocolate.

  • Blend with the hand whisk until you have a creamy mixture without lumps.

    Take the glasses from the fridge and make the second layer of milk chocolate.

  • Place in the fridge again for 1 hour.

  • Soak the gelatin in a little water in a small bowl and finely chop the white chocolate.

  • In a small pot, mix the fresh cream, milk, and sugar (if you want to add it) and bring to the heat until it almost reaches boiling.

  • Turn off the heat, add the gelatin sheets well-squeezed and the white chocolate, mix with the hand whisk until everything is melted.

  • Take the glasses from the fridge, set them straight, then remove the base that held them at 45° and pour the panna cotta over the white chocolate.

  • Decorate the surface with chopped or sliced almonds, or if you prefer, with other nuts of your choice.

    Place in the fridge and let rest a few hours before enjoying.

If you want a less sweet dessert, you can skip the sugar in the white chocolate panna cotta.
