The tomato risotto is a first vegetarian dish that you can further enrich with herbs to taste and why not with diced bacon sautéed with the onion, but we wanted to make a vegetarian version without animal fats.
A very simple tomato risotto that is also loved by children who usually enjoy tomato pasta, you’ll see it will be the same with this risotto.
Additionally, you can prepare the tomato risotto with canned tomatoes as I did today or with tomato passata if homemade even better, and some add tomato paste for extra flavor and a brighter color, the choice is yours.

Ingredients for tomato risotto
- 1.75 cups Carnaroli rice
- 14 oz canned tomatoes
- 1 onion (small)
- 3 tablespoons extra virgin olive oil
- 4 cups vegetable broth
- 2 pinches salt
- 1.75 oz Grana Padano DOP
- 0.7 oz butter
How to prepare tomato risotto
To prepare the risotto, you need to have good boiling vegetable broth at hand, then finely chop the onion.
Sauté it in a pot with high edges with the olive oil for a few minutes until it becomes transparent, then add the rice and let it toast well.
Meanwhile, crush the canned tomatoes on a cutting board.
Add a ladle of broth along with the canned tomatoes (if they are packaged, add 1 pinch of sugar to remove the acidity).
Continue cooking like a normal risotto, stirring occasionally and adding more boiling broth whenever needed.
When cooking is complete, adjust the salt and off the heat, stir in the butter and grated cheese.

How to store risotto
Risotto should be eaten as soon as it is prepared otherwise it will overcook, but if you have leftovers, try adding some melted cheese and the next day bake it in the oven to gratin.
