Now that I’ve discovered that the Turkish Salami with Yogurt is as good as the original but obviously lighter because it doesn’t have raw eggs, I make it at least once a week.

Ingredients for the Turkish Salami with Yogurt
- 5 oz digestive biscuits
- 3.5 oz plain yogurt (or Greek yogurt 0%)
- 1 oz unsweetened cocoa powder
- 2.5 oz sugar
- 3 oz dark chocolate
- as needed powdered sugar

Preparation of Turkish Salami with Yogurt
To prepare the Chocolate Salami with Yogurt, first cut the dark chocolate into pieces and melt it in a bain-marie or in the microwave and set aside.
Break the digestive biscuits into pieces by placing them in a bag and using a rolling pin or meat tenderizer.
Then put the biscuit pieces in a bowl, add the unsweetened cocoa powder and sugar, and mix with a rubber spatula.
Add the yogurt and melted chocolate to the bowl, then mix first with the spatula and then with your hands until you have a coarse and sticky mixture.
At this point, turn the yogurt chocolate salami mixture onto a sheet of parchment paper or plastic wrap and compact it with your hands.
Then, with the parchment paper or plastic wrap, try to shape it into a salami by rolling it back and forth.
Close it tightly by sealing the edges and place it in the fridge for at least 4 hours.
If you’re in a hurry to taste it, you can place it in the freezer for 1 hour, then remove it, eliminate the parchment paper or plastic wrap, and before slicing it, sprinkle it with powdered sugar.
