I first made Tyrolean gnocchetti some time ago with a different sauce, but today I offer you the original typical version: spinach spätzle with speck and cream. A really tasty and easy recipe to prepare. If you have a spätzle maker you’ll find yourself eating these gnocchetti very often and in many different ways.

Ingredients
- 10 oz Fresh spinach (about 10 cups loosely packed)
- 1 2/3 cups All-purpose flour
- 2 Eggs (medium)
- 1/3 cup Water
- 1 pinch Salt
- to taste Nutmeg
- 3.5 oz Speck
- 3/4 cup Heavy cream
- 2 tbsp Butter
- to taste Salt, Pepper
- 2 tbsp Extra virgin olive oil
Preparation
To prepare the Tyrolean gnocchetti, first wash the spinach thoroughly under running water, then drain and cook them in a pot with only the remaining washing water. It will really take just 5 minutes.
Once the spinach are cooked, transfer them to a bowl, add the water and blend to obtain a cream. Then add the eggs, season with salt and fold in the eggs with a spatula.
Add the flour in several additions, incorporating everything with a wooden spatula and checking that no lumps form. Season with freshly grated nutmeg and set aside.
Prepare the sauce for the gnocchetti: in a pan heat the butter together with the olive oil, cut the speck into thin strips and let it become crispy in the pan for 2 or 3 minutes.
Add the heavy cream, season with salt and pepper and let the sauce simmer gently to thicken over low heat.
Heat enough salted water to cook the Tyrolean gnocchetti and when it starts to boil fill your spätzle maker with the spinach batter. Move the spätzle maker back and forth so that the gnocchetti fall into the water little by little.
These gnocchetti will cook in a few minutes and rise to the surface; drain them using a slotted spoon and transfer them to the pan with the sauce. Toss everything for a few minutes to combine and…

Notes
Tyrolean gnocchetti can be stored in the fridge in an airtight container for 2 days.
Try adding some grated cheese to the gnocchetti and bake them in a hot oven at 392°F for 15 minutes and you will see how delicious they are.
