Vegetables en Papillote

Vegetables en papillote baked in the oven are a delightful side dish you can make with seasonal vegetables, resulting in a different and delicious dish each time.


This time, I used pumpkin, cauliflower, broccoli, and more, but you can also use beets and zucchinis if available. I found this method to make my nieces eat vegetables because instead of making one large packet, I make many small ones so everyone has their own to open at the table.

Ingredients for vegetables en papillote

  • 1 cauliflower
  • 1 broccoli
  • 2 carrots
  • 1 potato (large)
  • 1 bell pepper
  • 1 onion
  • 2 pinches salt
  • 2 pinches black pepper
  • 1 teaspoon dried oregano
  • 4 tablespoons extra virgin olive oil

Preparation

  • First, clean all the vegetables and peel the carrots and potatoes.

  • Cut the potato into chunks and cook it for 5 minutes in unsalted boiling water.

  • Peel the pumpkin and remove the seeds and inner strings. Separate the cauliflower and broccoli florets.

  • Cut the other vegetables into chunks of roughly the same size and slice the carrots into rounds.

  • Place all the vegetables in a large bowl, season them with herbs, salt, pepper, and extra virgin olive oil.

  • Mix well to flavor them, and if you have 30 minutes, let them rest.

  • Preheat the oven to 430°F, static mode and get a large piece of parchment paper.

  • Pour all the vegetables onto the parchment paper, then wrap them well. Tie the ends with kitchen string and place the packet on a baking tray.

  • Bake the vegetables on the middle rack of the oven for at least 25 minutes.

  • Carefully open the packet and check the doneness. If they need more time, close it again and bake for another 5 or 6 minutes.

  • Once cooked, let the vegetable packet rest outside the oven before serving them still hot and steamy.

You can store the vegetable packet in the refrigerator for up to 1 day.
