Vegetarian Bean and Vegetable Soup

I made the bean and vegetable soup a few days ago thinking precisely about the Lent period, I know this time Easter is in late spring but since the days allow it, why not have a good vegetarian, or rather, vegan bean soup and feel good right away.

Ingredients

  • 10.5 oz dried Borlotti beans
  • 1 carrot
  • 1 stalk celery
  • 1 potato (small)
  • 1 onion (small)
  • 4.2 cups vegetable broth
  • 1 chili pepper
  • 3.4 fl oz tomato puree
  • 1 leaf bay leaf
  • to taste salt
  • 3 tbsp extra virgin olive oil
  • 1 pinch black pepper (optional)

Bean and Vegetable Soup Preparation

  • To prepare the bean and vegetable soup, first, soak the beans in abundant cold water the night before.

    The next morning, drain them, rinse, and cook in a pressure cooker with the bay leaf for 20 minutes from the whistle, then release the pressure and set aside.

  • Peel the vegetables, wash and cut them into small pieces, then stew everything in a high-sided pan with the extra virgin olive oil for 5 minutes while stirring to prevent burning.

  • Add the drained beans from their cooking water, without discarding it as you’ll need it later, and add them to the vegetables.

    Stir to flavor, then season with salt and pepper, and finely chopped chili.

  • Add the tomato puree and two tablespoons of the beans’ cooking water and cook on low heat.

  • Cook for at least 20 minutes, adding warm vegetable broth if it dries out too much.

    After 10 minutes, blend the bean soup quickly, leaving some whole pieces.

You can prepare the bean and vegetable soup well in advance and store it in the fridge in an airtight container for up to 2 days.
