Ingredients for Venere Rice with Sausages
- 160 g Venere black rice
- 3 sausages
- 1 onion (small)
- 1 carrot
- 1 celery (stalk)
- 2 pinches salt
- to taste extra virgin olive oil
- to taste pepper
Preparation of Venere Rice with Sausages
To prepare the Venere rice with sausages, start with cooking the Venere rice itself. Place the Venere rice in a pot and cover it with five times its weight in cold water, meaning for 160 grams of rice use 700 milliliters of water. Turn the heat to low and without covering the pot, bring the rice to a boil and cook without stirring, without raising the flame for 30 minutes.
By doing so, you will obtain Venere rice cooked to perfection, not hard but not mushy. The center of the grain will still be al dente but just right, not hard, trust me, and try this method.
Meanwhile, as your Venere rice cooks, in a pan pour a drizzle of extra virgin olive oil, chop the onion and carrot into very small pieces and cook, stirring occasionally to color but not burn.
Once the onion starts to become transparent, peel the sausages and crumble them into the sauté. Stir with a wooden spoon to enhance the flavor and let them cook for 10 minutes.
At the end of the rice cooking, pour it into the pan with the sauce. At this point, the rice should have absorbed all its cooking water. Stir to flavor, adjust salt if needed, pepper, plate, serve after it has rested for 4 minutes and…
