Ingredients for Zucchini and Cheese Flatbread without Flour

  • 2 zucchini (medium)
  • 1/2 cup grated Parmesan cheese (or Grana Padano or Pecorino)
  • 1/2 cup mozzarella for pizza
  • 5.3 oz smoked salmon
  • 2 cups arugula (or lamb's lettuce or mixed greens)
  • 1.8 oz spreadable cheese
  • 1 tbsp lemon juice
  • 2 pinches black pepper (ground)
  • 1 tbsp extra virgin olive oil

Tools

  • 1 Mandoline
  • 1 Grater
  • 1 Pan non-stick

Preparation of Zucchini and Cheese Flatbread without Flour

  • Trim and slice into rounds using a mandoline the zucchini, grate separately the Parmesan and the mozzarella.

    It’s important to use mozzarella for pizza (the block kind) because buffalo mozzarella is too soft and would release too much liquid.

  • In a 24 cm non-stick pan, distribute half of the Parmesan and half of the grated mozzarella.

  • Cover the cheeses with the zucchini slices slightly overlapped, then place the pan on the stove.

  • Cook the Zucchini Flatbread without flour and eggs until the cheeses turn golden and the zucchini on the surface are softened.

    It will take about 8 minutes, remember, NO need to flip the flatbread during cooking.

  • Remove the flatbread from the pan and turn it over leaving the part with the zucchini down, cook the second flatbread.

  • Meanwhile, wash and dry the arugula, in a bowl dress it with lemon juice, oil, and some ground black pepper.

  • Cut the smoked salmon into strips and spread each flatbread with a little spreadable cheese (on the crunchy side).

  • Distribute the smoked salmon, complete with the arugula, and fold the zucchini flatbread without flour and eggs in half.

  • Serve them with a cold beer.

Storage and Variations

The Zucchini and Cheese Flatbread without flour and eggs can be stored in the refrigerator in an airtight container for 2 days without the filling, once filled they should be consumed on the same day.

Fill them with prosciutto crudo, cooked ham, or bresaola, or again with some grilled vegetables and canned tuna.

Instead of arugula, you can use lamb’s lettuce, valerian or mixed salad or greens mix.
