Frico is a traditional Friulian recipe made with potatoes, onions, and Montasio cheese. Today, we made Zucchini and Cheese Frico, obviously replacing the potatoes.
If you can’t find Montasio, you can replace it with Latteria cheese or another semi-hard cheese, so not mozzarella or stringy cheeses.
A very simple recipe to use zucchinis that our garden might have given us, and we don’t know how to use them anymore.
Cooked in a pan, the Zucchini and Cheese Frico is very simple, and you can serve it as an appetizer or as a tasty and vegetarian main course.

Ingredients for Zucchini and Cheese Frico
- 2 zucchinis (medium)
- 2 onions (medium)
- 1.1 lbs montasio (or latteria)
- 2 tablespoons extra virgin olive oil

- 1 Pan 7/8 inches in diameter
- 1 Grater
- 1 Wooden Spoon
Preparation of Zucchini and Cheese Frico
To prepare the Zucchini Frico, first trim the zucchinis and then grate them using a coarse grater.
Squeeze them with a clean cloth to remove as much water as possible and set aside.
Grate the cheese and set aside.
Thinly slice the onions and then heat the extra virgin olive oil in a 7/8-inch diameter pan.
Sauté the onion for 4 or 5 minutes, stirring often with a wooden spoon.
Add the well-squeezed zucchinis and sauté, stirring occasionally for another 5 minutes.
At this point, incorporate the grated cheese into the pan, mixing well with the wooden spoon.
At this stage, you can add ground black pepper if you like.
Cook without stirring anymore; you’ll see the cheese melt and form a nice golden crust on the bottom after 5 minutes.
Once the crust has formed, you can flip the Zucchini and Cheese Frico with the help of a plate (just like for regular omelettes).
Let it cook and form a crust on the other side as well.
Serve it hot, cut into slices or squares, and skewer them with toothpicks for a tasty finger food appetizer.
How to Store Zucchini and Cheese Frico
You can store it in the refrigerator, well-sealed in an airtight container, for 2 days.
