These zucchini and cheese puff pastries are tasty and very simple to make, they are prepared in no time and with just 3 basic ingredients you will have a great appetizer to eat both hot straight from the oven and at room temperature.
The zucchini puff pastries can be further enriched with cooked ham if you want to make them non-vegetarian and you can vary the herbs according to your taste. We used dried oregano as its aroma goes well with the zucchini, but parsley or chives would also work well.

Ingredients for Zucchini Puff Pastries
- 1 zucchini (baby)
- 1 sheet puff pastry (rectangular)
- 3.5 oz robiola (Philadelphia or other)
- to taste salt
- to taste pepper
- to taste extra virgin olive oil

- to taste milk (for brushing)

Preparation of Zucchini and Cheese Puff Pastries
Preparing zucchini and cheese puff pastries is really simple and quick, first wash and trim the zucchini and slice it thinly.
Season the zucchini slices with salt, pepper, and dried oregano, add a little oil and mix to flavor them.
Preheat the oven to 350°F static mode and in the meantime soften the robiola or chosen cheese with a little extra virgin oil, salt, pepper, and mix well.
Unroll the puff pastry and divide it into 6 rectangles, prick the center of each rectangle with a fork and spread the cheese.
Place the zucchini slices over the cheese to cover the pastry, leaving the edges free.
Fold the edges with a slight pressure, brush with milk, and bake.
Bake the zucchini and cheese puff pastries on the middle rack of the oven for at least 20 minutes, checking the browning.
Take them out of the oven and serve immediately.
Additional Tip
If you wish, you can further enrich your zucchini puff pastries by adding finely chopped olives mixed with the cheese, or add desalted anchovies cut into strips, or replace the zucchini with grilled eggplant cut into strips.
How to Store Zucchini Puff Pastries
You can store them in the refrigerator in an airtight container for 2 days.
