Zucchini and Puff Pastry Sunflower

This zucchini and puff pastry sunflower is very easy and very delicious, ideal as an appetizer even at room temperature but also as a light main course. You’ll see it disappear every time you serve it at home. If you want, you can enrich it with some cold cuts of your choice, but I wanted to make it vegetarian, so I chose to make it only with cheese that melts when cooked, giving a unique flavor to this rustic and delicious sunflower.

Ingredients for Zucchini and Puff Pastry Sunflower

  • 2 sheets puff pastry
  • 2 zucchini
  • 5.3 oz fresh cheese (melting type like Asiago or Latteria)
  • 1 egg (to brush the pastry)
  • 1 tbsp poppy seeds

  • 1 Cutter pastry cutter wheel

Preparation of Zucchini and Puff Pastry Sunflower

  • Prepare the zucchini sunflower by grating the zucchini with a coarse grater.

  • If your zucchini release a lot of water while grating, place them on a clean cloth and squeeze them to remove excess water.

  • I didn’t need to do it because my zucchini are freshly picked from home.

  • Grate the cheese as well with the coarse grater.

  • Roll out the first sheet of puff pastry and cover it with the grated zucchini.

  • Spread the grated cheese on top and cover with the second sheet.

  • Gently seal the edges.

  • Place a glass or a cup in the middle of the roll and press lightly.

  • Starting from the glass, make 4 cross cuts, then 4 more cuts in between, and further cuts in between to create many strips.

  • Brush with a beaten egg.

  • Sprinkle with poppy seeds and twist each strip onto itself.

  • Preheat the oven to 392°F in static mode and bake the sunflower for 20 minutes, checking the level of browning as every oven is different.

How to store the Zucchini and Puff Pastry Sunflower

You can store it in the refrigerator in an airtight container for 2 days.

If you prefer, you can freeze it, then let it thaw at room temperature before reheating.
