Ingredients for Zucchini and Tuna Balls in Air Fryer

  • 2 zucchini (medium)
  • 4.2 oz canned tuna (or in natural water)
  • 1 egg (large)
  • 5.3 oz ricotta
  • 1.4 oz grated Parmesan cheese
  • 1 clove garlic
  • 2 pinches salt
  • 1 pinch black pepper (ground)
  • 2.8 oz breadcrumbs

Steps

  • Drain the tuna from its preserving liquid and place it in a large bowl.

  • Wash, trim, and grate the zucchini using a coarse grater, place it inside a towel, and squeeze it to remove excess water.

    Add it to the bowl with the tuna.

  • Grate the Parmesan and add it to the zucchini, add the egg and ricotta, and mix to combine.

  • Season with salt, pepper, and the pressed garlic clove (you can use garlic powder if you prefer).

  • Only if the mixture is too soft, add a little breadcrumbs at a time, otherwise they will be too dry.

  • With hands slightly oiled with extra virgin olive oil, shape the balls, you can make them round or slightly flatten them.

  • Quickly roll them in breadcrumbs, place them in the fryer basket with parchment paper under.

    Lightly drizzle them with extra virgin olive oil and cook at 356°F for 15 minutes, shaking the basket after the first 10 minutes to achieve even browning.

Variations and Tips for Zucchini and Tuna Balls in Air Fryer

You can use the ricotta you prefer, even light, let it drain from its preserving liquid.

If you prefer, you can use garlic powder, if you don’t like it, you can omit it.

Add some finely chopped aromatic herbs to give an extra touch.

If the mixture seems too hard, add a few tablespoons of milk to soften it.

Zucchini and Tuna Balls can be stored in the refrigerator for 2 days in an airtight container.
