Zucchini Skewers with Sausage and Peppers

A complete main course with a side dish, the Zucchini Skewers with Sausage and Peppers are very easy to make. You can cook them on the grill like we did, or in the oven or air fryer.

Few and simple ingredients, in fact, 3 ingredients: zucchini, sausages, and peppers for a dish that can be eaten with your hands, ready in less than 20 minutes if cooked on a cast iron grill or in a pan. The sausage cooks very well, releasing its juices that flavor the zucchini slices that become slightly charred, while the peppers remain crunchy yet sweet.

Try them, and if you want, add a piece of onion and a basil leaf after each piece of pepper for an even more colorful and tasty dish.

Ingredients

  • 3 zucchini
  • 4 sausages
  • 1 red bell pepper
  • 2 pinches salt
  • to taste black pepper (ground)

Preparation of Zucchini Skewers with Sausage and Peppers

  • Trim the zucchini after washing and drying them, then slice them thinly with a mandoline.

    You can use a well-sharpened knife with a smooth blade.

  • Sprinkle the zucchini slices with salt and let them rest.

  • Cut the sausages into 3 parts. We left the casing on, but if you prefer, you can remove it gently.

  • Divide the pepper into sections after removing seeds and white filaments. Then cut it into pieces about 1.18 inches, season with a drizzle of olive oil.

  • Dry the zucchini slices and wrap a slice around each sausage piece.

  • Skewer on a bamboo skewer, a piece of pepper, a zucchini roll with sausage, another pepper, and roll.

    You can skewer 3 or 4 rolls per skewer.

  • Heat a cast iron griddle and when it becomes hot, place the skewers on it on the sausage side.

    Let them cook for 5 minutes, then turn them and cook for another 5 minutes.

  • If you want the zucchini slices to be well browned, grill the skewers on the zucchini side for a few minutes.

  • The skewers are ready, bring them to the table still hot, sprinkled with freshly ground black pepper. They are also delicious at room temperature.

Storage, Tips, and Variations

The sausage skewers can be stored in the refrigerator for 3 days tightly sealed in an airtight container.

If you want to make them even more appetizing, add a piece of red onion and a basil leaf along with the peppers.

If you prefer, you can cook them in the oven at 356°F with static mode for 20 minutes, in the air fryer at 338°F for 12 minutes, or in the microwave with crisp or grill function for 4 minutes per side.
