Ingredients
- 1 cup cups pearled barley
- 1 lb lbs broccoli (cleaned)
- 4 cups cups vegetable broth (approximately)
- 1 glass white wine
- 1.5 tbsp tbsps butter
- 1 shallot
- to taste salt
- to taste pepper
- to taste chili pepper (optional)

Recipe
First, cut the broccoli separating the florets from the stem and wash thoroughly.
Bring a pot of lightly salted water to a boil, add the broccoli and cook for 5 minutes, then drain and immediately immerse the broccoli in a bowl full of cold water and ice cubes to maintain the typical green color of the vegetable. Keep them like this for a few minutes.
After draining them from the water, set aside a few florets (they will be used to garnish the dish at the end) and blend the rest of the broccoli with an immersion blender until it becomes a smooth cream (add some broth if necessary).
In a saucepan, sauté the chopped shallot with a knob of butter, add the barley previously rinsed under running water, toast it for a few minutes then pour in the white wine and let it evaporate.
Add the broccoli cream, salt, pepper, add chili pepper if desired, and cook the barley by slowly adding the vegetable broth, it will take about 30 minutes.
Before serving, decorate with whole broccoli florets and I recommend a nice grating of parmesan cheese.
