BERRY CHEESECAKE

Berry cheesecake with yogurt and mascarpone is a recipe without cream and no baking, an easy and quick marbled cheesecake made with a base of marie or digestive cookies, a delicious and fresh dessert that you can prepare in single servings just like the yogurt and pistachio cheesecake in a jar.

I love cheesecakes in all their variations, but today’s recipe is unbeatable, a real delight that my whole family liked, and the marbled cake version surprised everyone, a true joy for the eyes and palate. You can make the base with classic, cocoa, or mixed cookies like I did in the jam cheesecake.

How can you resist such a delight? It’s impossible, so you just have to get in the kitchen, follow all the steps of my recipe, and prepare the berry cheesecake. It will be really easy, oh…I forgot to show you how I had fun creating the marbled effect. See you next time!

Berry Cheesecake Ingredients

  • 9 oz Digestive biscuits (or marie)
  • 6 tbsp butter
  • 1 cup plain yogurt
  • 1 cup mascarpone
  • 5.5 oz cream cheese
  • 1/2 cup granulated sugar
  • 2 tsp gelatin (sheets)
  • 2 tbsp milk
  • 7 oz berries
  • 1 tbsp granulated sugar
  • 1.8 oz berries
  • A few leaves mint

To make the cheesecake, I used a springform pan with a diameter of 8 inches. I removed the base and assembled the dessert directly on a serving plate.

Recipe

A delicious spoon dessert, fresh and without cream!

  • Place the cookies in a mixer and finely chop them.

  • Transfer them to a bowl and mix with the melted butter.

  • Prepare the springform pan by setting it without the base directly on a serving plate, then spread the cookie mixture inside the pan and press it well with a spoon to even it out. Place the base in the fridge.

  • Prepare the cream by mixing mascarpone, cream cheese, and yogurt, add the sugar and stir again.

  • Now soak the gelatin sheets in cold water for 10 minutes, then squeeze them and transfer them to a small saucepan. Dissolve the gelatin sheets with 2 tablespoons of milk over low heat without boiling. Let it cool, then add the gelatin to the previously prepared cream, mix well, and temporarily place the mixture in the fridge.

  • Prepare the berry sauce by placing the berries in a small pan with a tablespoon of sugar, cook for 5 minutes, and blend until you get a smooth cream like jam (if you want to remove the seeds, just strain the sauce).

  • Retrieve the cheesecake base from the fridge, pour half of the prepared white cream over the cookies, then spread the berry sauce all over the surface.

  • Cover with the other half of the cream and swirl the mixture on top with a toothpick to create a marbled effect. Place it back in the fridge for at least 2 hours or in the freezer for 30 minutes before removing the cheesecake from the mold.

  • After the resting time, remove the cake from the mold using a sharp knife and decorate with whole berries and fresh mint leaves.
    Serve the berry cheesecake by slicing the dessert and placing it on dessert plates.

Storage and Tips

Storage: the berry cheesecake can be stored in the fridge for up to 2 days covered.
If you use fresh products, you can also freeze the dessert.

Tips: if you don’t want the marbled effect, you can spread the berry sauce on top (without placing it in the middle of the dessert).
You can also make this cheesecake with only blackberries, raspberries, or blueberries.
