Soft and crumbly: butter cookies with sugar sprinkles delicious, a recipe of cookies that are very simple and reminiscent of grandma’s cookies, perfect for enjoying with coffee or during tea time on cold winter days. Packaged in small cellophane bags, they can become a lovely Christmas gift idea.
Unlike my cookies with sugar sprinkles for dunking, the ones I’m presenting today are buttery shortbread cookies that are very crumbly and therefore perfect as a sweet treat for any time of the day. Stored in a cookie tin, they last several days and are also lovely to look at with all those sugar sprinkles on top.

Ingredients
Yields about 40 cookies.
- 2 1/2 cups all-purpose flour
- 7 oz cups butter
- 2/3 cup granulated sugar
- 1 egg yolk
- 1 tablespoon water
- 1 pinch salt
- Half vial almond flavoring (bitter)
- 1 egg yolk (+ water for brushing)
- 1/4 cup sugar sprinkles

You can prepare these cookies using any shapes you like. I used square shapes similar to these.

Recipe
Mix the softened butter cut into pieces with the sugar, add a pinch of salt, one egg yolk, a tablespoon of warm water, and half a vial of bitter almond flavoring, and stir.
Add the sifted flour and work again, if necessary even with your hands, until you obtain a smooth dough. Cover it with plastic wrap and keep it in the fridge to rest for an hour.
After the resting time, take the dough and roll it out on a work surface, making it approximately 1/8 inch thick. Using the chosen cutters, cut out the cookies and place them on a baking tray lined with parchment paper.
Brush the cookies with a beaten egg yolk mixed with a bit of water, then sprinkle with sugar sprinkles.
Bake in a static oven at 356°F for about 15-18 minutes (remove them as soon as they start to brown).
Delicious, crumbly, and uniquely simple. The butter cookies are embellished with many sugar pearls that not only make the dessert tastier but also prettier to see or give as a gift. If you place them in transparent bags and then put them in a nicely ribboned box, they become a much-appreciated gift.
Storage and tips
Storage: butter cookies keep well in a cookie jar or a tin box for a week.
Tips: You can use cookie cutters of any shape.
If you want, you can use milk instead of egg for brushing, but they will be less golden.
For variety, you can replace the sugar sprinkles with colored sprinkles, chocolate, and similar.
