CAKE WITH GRAPES

Cake with grapes, a soft cake with black grapes that you can also make with white grapes, easy and wholesome just like grandma’s cake. Only a few simple basic ingredients for this recipe: eggs, sugar, flour, baking powder, a little butter and fresh seasonal grapes.

Unlike grape flatbread which is made with bread dough, the grape cake is made just like a classic cake, imagine a simple apple pie except in this recipe instead of apples you use grape berries. I preferred large black ones, but strawberry grapes and white grapes are also perfect.

Ingredients

  • 2 cups all-purpose flour
  • 1 lb grapes (black or white)
  • 2/3 cup granulated sugar
  • 5 tbsp butter
  • 3 eggs
  • 1 packet baking powder
  • 1 pinch salt
  • 2 tbsp brown sugar

For this cake you will need a springform pan with a diameter of 8-9 inches.

Recipe

  • Detach the grape berries from the bunch, wash them and drain them very well from the water.
    In a bowl, beat 3 whole eggs and whisk them well with the granulated sugar.

  • Melt the butter and once it’s melted, add it gradually to the batter in a thin stream and mix.

  • Now add a pinch of salt, the sifted flour together with the packet of baking powder and continue mixing, you will see that the batter will be quite thick.

  • Add the grapes (leave a dozen berries to put on top of the cake) and mix until they are well incorporated with the mixture.

  • Butter and flour a springform pan of 8-9 inches. and pour the batter in, leveling it with a spatula. Place the reserved grape berries here and there on top of the cake, then sprinkle the brown sugar evenly over the surface and bake in a preheated static oven for about 40-45 minutes, always do the toothpick test before removing it. Let it cool down and serve.

Storage and Tips

Storage: the cake with grapes can be stored at room temperature for 2-3 days under a glass dome.
Tips: you can make the cake with any type of black or white grapes; if you can find them, it would be better to use seedless grapes.
If you decide, you can use granulated sugar instead of brown sugar before baking. Otherwise, you can always garnish with powdered sugar before serving.
