Inspired by the famous pane guttiau, these carasau bread chips, also known as carta musica, are a tasty snack like potato chips or polenta chips in the air fryer, light and irresistibly crunchy, perfect for any occasion. I prepare them in three easy variations, just like I did with fried mozzarella: in a pan, air fryer, and oven, with different flavors like rosemary and garlic, paprika or oregano, but also try with cheese and black pepper.
With just a few ingredients and in a few minutes, you can transform a typical product of Sardinia into an original snack, perfect for an aperitif, to munch on in front of the TV, or to serve with sauces, cheeses, and hummus. Ingredients
- 2 sheets carasau bread
- to taste extra virgin olive oil
- 1 clove garlic (optional)
- to taste herbs (rosemary, oregano, etc.)
- to taste paprika
- to taste salt

Recipe: carasau bread chips
Carasau bread chips: 3 easy and quick cooking methods!
Break the carasau bread into pieces the size of chips.
Place a non-stick pan over medium-low heat with a drizzle of oil, when it’s hot, add the bread pieces and fry them for 1-2 minutes per side turning them with tongs. They should be golden and crunchy.
Once ready, transfer the chips to a plate with absorbent paper and add salt and herbs to taste, while they are still hot (I made these with oregano).
Break the carasau bread into pieces to get the shapes of chips.
Transfer them to a bowl and season with olive oil, salt, and the herbs you prefer (I made a mix with a garlic clove and rosemary). Mix well so that the bread is well seasoned on all sides.
Place the bread pieces on a baking tray lined with parchment paper, without overlapping them too much.
Bake in a preheated static oven at 356°F (180°C) for 5 minutes, or until the bread becomes golden.
Once ready, remove from the oven and let cool before serving.
Break the bread into small pieces, similar to chips.
Place the bread pieces in the air fryer basket in a single layer (if needed, cook in multiple batches to avoid too much overlapping).
Season with air fryer spray oil, salt, and herbs to taste (I chose paprika here).
Cook at 356°F (180°C) for 3-4 minutes, shaking the basket to ensure the chips cook evenly. They should be golden and crunchy, so if necessary, extend the cooking time by 1-2 minutes.
Once ready, remove the chips and let them cool before serving.

Storage and Tips
Storage: Carasau bread chips keep for about 5 days in an airtight container. You can also store them in a well-sealed paper bag, but in this case, they last less, about 1-2 days. Freezing is not recommended.
Tips: don’t overdo it with oil: just a little is enough to make them crunchy. If you use too much oil, they might become heavy or soggy.
Watch the cooking: it takes just a few minutes to burn them, especially in a pan or air fryer. Keep an eye on them!

Crispy speck and honey
Add pieces of speck (or pancetta) sautéed in a pan and a drizzle of honey on top: a delightful sweet-salty contrast.

Sprinkle finely grated Parmesan (or pecorino) while the chips are still hot, so it melts a bit, then add freshly ground black pepper.
Can I use pre-seasoned carasau bread?
