Tasty chicken strips alla pizzaiola without mozzarella, bites cooked in a pan with simple and quick tomato, a recipe prepared with my pizzaiola sauce enriched with black olives, capers and flavored with fresh oregano leaves.
After the rosemary chicken bites recipe, I tried this delicious variant to make a chicken main course that my son and others love so much, I must say I hit the mark… a great success!
You can prepare the chicken strips alla pizzaiola for any occasion, you can even get ahead by making the tomato sauce first, so you’ll be ready to serve them at the table in no time, maybe accompanied by crispy potato chips.
Of course, the recipe can be simplified and prepared without the addition of capers and olives, though these ingredients make it much tastier. Let’s prepare it together!

- 2.8 oz black olives (pitted)
- 0.7 oz capers
- to taste salt

- 1.1 lbs fresh, ripe tomatoes (or 12 oz. canned peeled tomatoes)
- 1.7 tbsp olive oil
- Half onion
- 1 clove garlic
- to taste salt

- to taste dried oregano (or fresh)

Recipe for Chicken Strips alla Pizzaiola in a Pan
Prepare the pizzaiola sauce by following all the steps of the pizzaiola sauce recipe using the ingredient weights listed in this recipe.
To make the strips alla pizzaiola, use half the dose indicated in the basic recipe.
Tip: You can also prepare the full dose with the ingredients listed in the basic pizzaiola sauce recipe and use the excess to flavor a nice pasta dish.
Meanwhile, while the pizzaiola sauce is cooking, cut chicken breasts into bites and brown them in a pan with a little olive oil. Salt, pepper, and cook until done.
Once the pizzaiola sauce is ready, add it to the strips along with capers and black olives cut in half. Add fresh oregano leaves (if you don’t have them, use dried oregano), let it flavor for a few minutes, and serve the chicken bites alla pizzaiola in its pan immediately.
Did you notice that I didn’t use mozzarella at all? I intentionally prepared a very simple, quick, and lighter dish. If you want a richer meat dish, you can always add a few slices at the end of cooking. Enjoy your meal!
Storage and Tips
Storage: I recommend consuming the chicken bites with sauce as soon as they are ready. If you have any leftovers, you can always store them in the refrigerator for 1-2 days in an airtight container.
Tip: you can even prepare this recipe using whole chicken breasts.
You can decide to add mozzarella by placing it at the end of cooking.
Instead of salt and pepper, you can season the chicken bites with my aromatic salt for meats and vegetables.
