CHRISTMAS SANDWICHES

Easy and economical Christmas appetizers: fried Christmas sandwiches, i.e., Christmas snacks made with fried bread dough filled with stracchino and cold cuts shaped like Christmas trees, stars, comets, etc. With the help of Christmas cookie cutters making these dough sandwiches will be really fun, easy, and quick. I used my classic pizza dough but you can make it even quicker by using ready-made dough, which is easily found in all supermarkets.
Unlike the Christmas seed bread snacks, I filled these sandwiches with creamy stracchino and cold cuts to taste (salami, mortadella, ham, speck, etc.), then I closed everything with a toothpick speared with an olive, and to make the Christmas appetizer I added a small piece of chili pepper (I had it in the jar of olives) but using green olives stuffed with pepper is more practical.

Ingredients

  • 24 green olives (stuffed with peppers)
  • 8.8 oz stracchino cheese
  • 8.8 oz prosciutto (salami, mortadella, speck, etc.)
  • to taste salt
  • to taste seed oil (for frying)

Recipe

  • Roll out the pizza dough on a work surface to a thickness of about half an inch (do not roll it out too thin, otherwise the fried bites won’t slice well in half). Use the appropriate Christmas-shaped cookie cutters to cut out the snacks, mixing them in various shapes (star, tree, comet, etc.)

  • Fry in hot seed oil until golden brown, turning the Christmas sandwiches on both sides, then drain them, transfer them to a plate lined with paper towels, and salt.
    Once cooled, cut each piece in half, spread with stracchino, add a cold cut of your choice, close with a toothpick speared with an olive (you can use green olives stuffed with red pepper).

Storage and Tips

Storage: the Christmas sandwiches are best enjoyed immediately, however, you can store them for 1 day at room temperature if only fried; if stuffed, they should be kept in the refrigerator.
Tips: the quantities of stracchino and cold cuts can vary depending on how much you fill your sandwiches.
Instead of green olives, you can use mushrooms in oil.
Do not roll the pizza dough too thin, otherwise, the snacks won’t puff up during frying and it will be difficult to cut them in two parts.
