That’s how the citrus trio cookies were born, soft and crumbly, with a sweet marmalade heart that changes with every bite.
The fresh aroma of citrus pairs wonderfully with chocolate, just like in the chocolate and orange cookies. Citrus cookies are perfect to enjoy with a cup of tea or to serve as a small sweet tasting.

Work the butter and sugar with an electric whisk or a spoon until you obtain a soft cream.
Add the egg, the grated zest of half a lemon, half an orange, and a few drops of its juice.
Incorporate the sifted flour, almond flour, baking powder, and a pinch of salt, then mix until you have a soft but manageable dough. Let it rest in the fridge for 15 minutes, covered with cling film.
After the resting time, take the dough out of the fridge, take a piece of dough weighing about 25 g (approximately 0.88 oz), place it between the palms of your hands, and roll it until you obtain a smooth ball, then place it on a baking sheet lined with parchment paper.
Using the handle of a wooden spoon, press in the center of each ball to create an indentation.
Fill each cookie with half a teaspoon of marmalade, alternating between orange, lemon, and mandarin flavors.
Bake in a preheated static oven at 356°F for 13-15 minutes, until they turn golden at the edges. Remove from the oven and let them rest on a cookie rack.
Sprinkle with powdered sugar before serving for a special touch.
