If you’ve already tried my classic ice cream wafers or my almond wafers, you cannot miss today’s recipe; these are cookie wafers, a very thin sweet treat that can be used both as a wafer and simply enjoyed as a small cookie. To make them, just knead 100 grams of each ingredient, form a cylinder, cut into many discs, and then bake at 300°F.

- 1/2 cup brown sugar
- 3/4 cup all-purpose flour
- 1/2 cup butter

Recipe
In a bowl, put all the ingredients together with the softened butter and knead quickly until you get a smooth and homogeneous dough.
Roll the dough into a cylindrical shape, cover, and let it rest for about 1 hour. After the time has passed, cut the dough with a smooth blade knife into many discs about 1/4 inch thick each.
Meanwhile, line a baking tray with parchment paper and place the cookie wafers slightly apart from each other as they tend to spread during cooking.
Bake in a preheated oven at 300°F for about 20 minutes or until they acquire a nice golden color. Once cooled, you can serve your wafers.
Here are your ready wafers or cookies depending on how you want to use them. These treats are perfect either accompanied with ice cream cups or creams of all kinds, but they are also delightful as a post-lunch cookie. They have only one flaw…you can’t stop at just one!
Storage and Tips
Storage: The cookie wafers keep perfectly for several days when stored in a tin or cookie jar.
Tips: During cooking, the wafers tend to spread and often stick to each other. However, once cooled, they will easily separate.
