This is a simple recipe to make cookies with dried cranberries. Being a fan of cookies in all their forms and variations, I really wanted to try these soft rings with dried cranberries that are deliciously flavored. After many cookie recipes I’ve suggested to you, here it is, a new one that I’m sure won’t disappoint you. I love the taste of cranberries and I use them in many of my preparations, such as in Linzer cookies or in the buckwheat cake with jam. But not only that: I also use them for decoration, as I did in the chocolate salami cake or in the muffins with chocolate ganache. Today I did not use fresh ones, but I chose dried ones to make these delightful cookies, which I assure you will be a hit!

  • 1 2/3 cups all-purpose flour
  • 7 tbsps butter
  • 1 egg
  • 1/3 cups granulated sugar
  • 1 packet vanillin
  • 1 tsp baking powder
  • 1/3 cups dried cranberries
  • to taste powdered sugar (for decoration)

So good, you can’t stop at one!

  • In a bowl, beat the softened butter at room temperature with the sugar until you get a smooth and fluffy cream. Add the egg, vanillin, and mix until you get a homogeneous mixture. Add the sifted flour, baking powder, and a pinch of salt, then mix to form a soft dough.

  • Place the dried cranberries to rehydrate in hot water for 10 minutes.
    After rehydrating, drain the excess water, squeeze them lightly, and incorporate them into the prepared dough.

  • Now all that’s left is to shape and bake your rings:
    take a small portion of dough and form a ball. Then, with your hands, make a hole in the center of each ball to create the shape of a ring.
    Place the cookies on a baking tray lined with parchment paper, leaving some space between them.
    Bake in a preheated static oven at 350°F for 15 minutes or until the rings begin to brown.
    Remove from the oven and let them cool on a cookie rack.
    If desired, sprinkle with powdered sugar and serve.

Tips: if the dough is too dry, add a tablespoon of milk; conversely, if it is too soft, add a tablespoon of flour.
– You can shape the cookies as you like: I chose rings, but you can also make round balls, slightly flattening them before baking to get whole cookies.

FAQ (Questions and Answers)

  • Can I use fresh cranberries instead of dried ones?

    Unfortunately, fresh cranberries are not ideal for this recipe, as they contain much more water, which could compromise the consistency of the dough. If you want to use fresh cranberries, I recommend lightly drying them in the oven.

  • Can I use other dried fruits instead of cranberries?

    You can replace cranberries with other varieties of dried fruits such as raisins.

  • Can I add chocolate to the cookies?

    Sure! White or dark chocolate chips pair perfectly with cranberries. Add them to the dough for an extra touch of sweetness and indulgence.
