This creamy soup is born from the combination of the delicate flavor of romanesco broccoli and the softness of cannellini beans that I had already cooked (see how to cook beans) and flavored with rosemary to enhance its aroma. Blended together, these ingredients create a nutritious, simple, and comforting cream, ideal for those seeking taste, wellness, and simplicity in a single dish. I recommend trying this cabbage also in a good dish of romanesco broccoli and tuna pasta or more simply in spaghetti with garlic, oil, and romanesco broccoli. Today, however, having chosen to prepare a creamy soup of vegetables and legumes, I cannot help but celebrate its enveloping taste and extraordinary goodness.   • 2.2 lbs romanesco broccoli (about 3 cups of cleaned florets)
  • 3 tbsp extra virgin olive oil
  • 1 white onion (chopped)
  • 4.2 cups water
  • 1/2 bouillon cube
  • 1 sprig rosemary
  • 14 oz canned cannellini beans
  • to taste salt
  • to taste pepper

Recipe: creamy romanesco broccoli and beans soup

A smooth and delicate cream!

  • Remove the leaves and outer stem of the cabbage, then with a knife cut out the florets and wash them thoroughly under running water.

  • In a saucepan, put the oil and sauté the chopped onion, then add the freshly cleaned broccoli florets.
    Cover with slightly salted water, add the half bouillon cube (or granulated), and bring to a boil. Cover with a lid and cook for about 15-20 minutes over medium-low heat or until the vegetables are well cooked (add more water if needed).

  • In a pan, pour the ready beans with their water (you can use canned ones or if you cook them at home, here are my tips), along with a sprig of rosemary for flavoring. Heat for 5 minutes, add a sprinkle of pepper, and remove the rosemary.

  • Once the vegetables are cooked, all you need to do is add the flavored beans to the saucepan where you cooked the broccoli and blend them with an immersion blender. Mix everything together and adjust the salt.
    NOTE: if you want to garnish each dish as you see in the photo, set aside some florets and whole beans before blending.

Storage: the creamy soup can be stored in the refrigerator in an airtight container for up to 2 days. Reheat it before enjoying it again.
If you wish to store it longer and have used fresh products, you can freeze the soup. In this case, transfer it to freezer-safe containers and consume it within 3 months. To enjoy it, thaw it in the refrigerator overnight and reheat it thoroughly before serving.
Tips: serve the soup hot, garnishing with toasted bread croutons, grated cheese, and freshly ground pepper. A drizzle of raw extra virgin olive oil will add additional flavor.
